I heard some company, or even MAN offered a one or two day classes on engine maintenance, etc. This was tied to the MIBS or FLIBS. Anyone aware of theses classes in Florida? I'd like to get a better understanding of my engines.

Cat does, check their website, think it´s a tad longer than 1-2 days though.

Yes they normally do the Man training at the time of the FL boat show. I attended it in Pompano a few years back. It was less than a day but well worth the time.
