The convertibles are generally just shy of 3' and the FBMY about 5', but I caution against building your dock to the boat. You'll have tides to deal with, friends stop by with their boats, and you might one day have a different or additional boat. You can always put a step on a low dock but will you want to climb up and down a ladder to a too high dock? In Michigan you deal with a lot of ice which loves to pull fixed docks out of the ground. If I were building a dock today I'd put in a floater as it will rise and fall with the tide and can be pulled for ice if need be.
Figure about 5’ for most of the MYs. In a hurricane prone area you want extra tall pilings to accommodate surge
Freeboard will vary down the length of the hull. With your HIN, call the factory support. They may even be able to offer you the displacement number you are looking for.
Set them as high as possible. It never hurts to have them extra tall.......but the rubrail on the older hatteras are around 6' above the waterline.
6 feet is about right, plus the tide, plus the hurricane surge on a full moon. So as tall as you can. If it were me they'd be 20 feet.
Yes, Tall piles are a must. When we built our last dock in Satsuma, in normal weather our after deck (where you board) and dock are same level. During Storm Dorian 2019, we rose 4 feet. Had 5 more feet to go.
