    On board or at home. For guests or family. Any meal, what are you having.
    This morning I fixed a quick toasted bagel with grilled onions and ham, cheddar, and egg with black pepper and oregano.

    Yesterday I made almond crepes with Morello cherrys, cherry cream cheese, and cherry syrup.

    While the subject isn't really relevant to our discussions, I'm a full time cook. I prepare most of my own foods because my diet is extremely limited. 8 years ago I developed a sensitivity to gluten which I kept in check by avoiding bread, beer, pasta and just about everything on the grocery store shelf. No complaints, it forced me to eat a healthier diet. Fish, vegetables, fruit, nuts & seeds have been the staples of my diet for 15 years, however I suffer from a substance abuse problem with cookies!

    Last year, I began having some intestinal issues. I was distended and food wasn't being properly absorbed. I was losing muscle mass and dropping weight. Went to several doctors, had some tests run. Finally ended up with the chief of gastroenterology at Good Samaritan hospital who determined I had become intolerant to fructose. Otherwise known as sugar in processed food, it is not actual sugar. It was causing intestinal inflammation which was exasperated by another item in my diet... pumpkin seeds, which I constantly snacked on behind the keyboard. Why? Because they are good for a man's prostate. Little did I know, pumpkin seeds are not easily digested by the intestines and can tear apart the inner lining of your bowels. I was on my way to colon cancer.

    Glad to say I'm all better now. It certainly rearranged my priorities. The doc gave me some advice which I'll pass along to anyone reading this thread. He said..." if you never want to be on my operating table, remove wheat, beer and fructose from your diet". These are often culprits leading up to intestinal issues.

    I did notice an increased inventory in beer about 8 years ago in S FL.
    Prices dropped and the market was flooded with beer & pizza.
    Of course, I had to help the economy and save the beer market.
    Lately, my father quit drinking bourbon, well I'm off again saving another important segment of our economy.

    Ha! Actually it's not bad for me.:D
    My diet is a constant balance act. After a quad bypass and a couple of stents, my cardio tells me not to eat the usual stuff. But Im also 100% kidney-less so my nephros tell me I have to eat lots of protien, you know, meat and eggs!:D

    Between the two dietary restriction, it's pretty tough. A lot of my favorites are strictly taboo. OJ, tomatoes, grapefruit, whole grains, nuts, dairy, and a plethora of veggies are now a no go.

    My liquid intake is restricted to 4 cups a day, that includes fruit and veggies that are mostly water.

    I don't urinate, so any liquid has to be pumped out in dialysis, which is 4 hours 3 days a week. Basically sucking all if my blood out and filtering it 8 times in that 4 hours. That's why I need the protien. It makes me anemic.

    I eat mostly lean pork. A little chicken, and beef maybe 3-4 times a month, wether a burger or a steak.
    It's a toss up wether the the heart, the kidneys, or an undocumented alien behind the wheel without insurance will do me in.:D

    I play chef in addition to captain when on charter... here is my version of eggs Benedict. I use a slice of toasted Bahamian bread and Bacon (I just don’t are the point of Canadian bacon... boring n dry). I use Traders Joe thick Black Forest bacon cooked with a little brown sugar and paprika. The hollandaise is the real thing... not from a packet or in the blender. Very healthy :) just egg yoke and European butter with a little lemon juice, simmered and whisked over low heat. Tricky thing.

    Always a hit.

    Good for you. I learned a ton about the sugars after IBS diagnosis. The FODMAP diet guidelines have helped a lot. The F is for Fructose. There are plenty of other saccarides that can tear the gut up too.

    I just put a half a loin roast in some home made mojo marinade. I'll fix it Saturday afternoon.

    Beer is healthy, 100% vegetarian, full of vitamin B and adds to the personality.
    I would change docs there boss, this guy is bad news..:eek:

    The Cuban roast was great. I fixed Maduros and Canarian wrinkly potatoes for sides.

    Made from scratch buttermilk biscuits and sausage gravy. Side of scramble eggs with onions and cheddar cheese. Gravy made with spicy sausage, fresh ground pepper, and a seasoning salt that an Australian friend left at my place. Yeah, I know it's not very healthy but so good. Probably put the leftover gravy over an omelet tomorrow. Just had a craving for good biscuits and gravy.
