I know of individuals who have done the electrical conversion from Europe to the US and while potentially expensive and time consuming, not a big deal. It may be even easier going from US to Europe since Viking specs a larger gauge wire for the US bound Princess (lower voltage but higher current for the same appliance). You'd need to look at appliances and whether you need to change them out to accommodate the voltage and frequency, but many appliances now are dual voltage/dual frequency.
There may be non-technical reasons Viking will tell you not to (warranty, etc, etc) but there aren't many technically founded reasons. Boats travel back and forth all the time between the continents without concern when properly equipped.
